Three things it reads before it writes

Every reply is written as the patron would write it. Before the first word, three things are read: the house, the people it welcomes, and the one who wrote.

A reply that knows the standing of the house

A bistro does not answer like a gastronomic table. The reply knows where your house sits: its stars, its distinctions, such as Maître Restaurateur or a ranked wine list, and its price range.

The same review gets a different answer at a zinc counter than under a white tablecloth, because the patron of each would say it differently.
